Love Letters....

February is known as the month of love....so before it ends I have one "too cute for words" love story.
For all you out there who don't believe that true love will happen...take a moment to read Chris and Whitney's story...I promise you that you that if you are still looking for Mr. or Mrs. Right you might be headed to OKCupid (and no they are not paying me for this endorsement).

Whitney had just joined OkCupid when Chris sent her an email. Most people just say, "Hi. You’re cute," but Chris sent two pages explaining who he was, what he was like and why he was perfect for Whitney. In fact, she dubbed him "cover letter guy." He also sent an unflattering picture taken late at night, in a white t-shirt, when he’d clearly given up on love. Whitney thought his email was…thoughtful…but (she shamefully admits) definitely wasn't sold on him. The fact that he worked at Duke may have played a role in this Carolina girl’s prejudice. She responded that they could be friends. In fact, she mentioned being "friends" about four times thinking, “Let’s let him down easy.” Not one to easily accept defeat Chris thought, “Alright she’s interested!” Despite her disinterest, he pursued until she finally called and agreed to dinner. When an ecstatic Chris picked Whitney up she immediately realized he was very handsome, super cool (far cooler than her) and incredibly thoughtful (he brought her favorite fruit snacks).

Love Letters
Here is some early correspondence between Chris and Whitney

Chris’ first letter:

My name is Chris and I currently live and work in Durham. I enjoy meeting new people and trying new things. In fact, this whole okcupid thing is very new to me --> I only came across it a few days ago, and have not even completed my profile yet. Nonetheless, if it gives me the opportunity to meet someone new who I may develop a great friendship with or even more, then I am all for it and willing to try it out. Since my okcupid profile is sparse right now, let me tell you a few things about me in this message --> I enjoy travel (abroad especially), am very close to my family, and I am hispanic/latino (Peruvian) with a little sprinkle of Chinese (my great-grandfather was Chinese). I am looking to be in a relationship and at the very least a long-lasting friendship with a good intelligent girl. Other stuff about me --> I have finished medical school and completed my residency training, and am currently halfway through my specialty training at Duke Medical Center. Of course, the downside to all of this, is that up until this point, I have been in-training forever --> but, luckily, I'll be done in 2012. I am 33 years old, and although there is a small gap in our ages, I suspect that we are looking for similar things in life. Ultimately, what I can bring to the table is someone who is kind, honest, educated, adventurous, has a good sense of humor, and who has great values that were instilled in me by my parents. And yes, I would like to say that I do tons of outdoor activities too, but the truth is that I haven't done much YET --> what I do have however is the desire to want to try and learn lots of new things and have new adventures and hopefully, you would want to try these with me too. So, although I've never mountain-climbed or kayaked yet, I think it's only a matter of time.
I'd love to get a chance to learn more about you and maybe even meet you. You can rest assured that I am not weird or dangerous in any way. Honestly, I do think of myself as a decent guy with a good heart and definite direction in life. I am simply looking to establish a relationship with a great girl that will hopefully lead to something very meaningful --> either as a couple or at least as friends. After all, I am not originally from North Carolina --> I grew up in NJ and this is where my parents still currently reside (I also still have a good amount of family living in Peru). I have only been at Duke for a little over 1.5 years, and it would be great to find someone who I can share laughs with over dinner and other activities, and who can enrich my life with her interests and experiences in the same way that I can do for her. What else can I tell you about myself in this message --> I love eating all types of food, and will seek out great restaurants in any city where I happen to be. One of the reasons that I loved my trip to Italy several years ago, was that the food was amazing (ditto with France). I speak fluent Spanish (a perfect match!) and have forgotten most but not all of my elementary French. I am 5 foot 6 and about 155 pounds with a thin to average build (trying to find time to exercise more these days now that my hospital schedule is a little more tolerable). I have black hair and brown eyes. Actually, I did manage to download some pictures of myself onto my profile page, so you can check those out if you'd like. Dear Chris,

I am sorry to have taken so long to respond. I thought your well thought out message deserved a well thought out response.

It sounds like you are a very passionate, caring and open-minded individual. It is clear that you have very honorable intentions, and you also seem very accomplished and cultured--what great qualities. As you mentioned in your message to me, friendship is a great place to start. This is actually what I am looking for in the immediate future and is why I joined OKcupid, because I must admit that I am not yet ready for a relationship. I just ended a relationship of 1 1/2 years 6 weeks ago, and am still giving myself time to heal. I joined OKcupid because I wanted to establish friendships, and hopefully, when the time is right, a friendship could grow into something more. So if you are interested in getting to know me as a friend, then I would be very happy to get to know you as well.

So, congratulations on finishing your residency. I am sure that must have been very difficult. What will you be specializing in? You had mentioned that you are Peruvian. What part of Peru is your family from? Are you able to visit them much? You said that you are relatively new to the area. Where did you live before? Did you go to undergrad and med school in New Jersey?

Shortly after their first date, Whitney left to volunteer in Guatemala. First, Chris bought a calling card. Then, unable to wait, he flew to Guatemala to see her. For a week, they travelled on the most amazing adventure. After Chris left, Whitney got sick. She needed to come home, but couldn’t afford the flight. Within a day she got an email with the ticket Chris had purchased to bring her home. Two days later he asked her to be his girlfriend at Duke Gardens. Things moved quickly since they knew they were perfect for each other and worked hard to not let school loyalties (*cough* ) come between them.

After getting the thumbs-up from Whitney’s dad, Chris proceeded to create the perfect proposal. They had talked about getting married at the Carolina Inn’s Bryan Courtyard under a tree. Tracey, from the Carolina Inn, contacted Whitney and asked her to come in to discuss some possibilities. Chris said he had to work, so Whitney took her roommate, Lindsey, with her instead. When they arrived, all Whitney wanted to do was look at the courtyard. She was so hard to hold back, that Lindsey resorted to distracting her with broken grandfather clocks in the lobby. When Tracey arrived she escorted them to the courtyard, where everyone contrived to leave Whitney alone. It was beautifully decorated with rose petals leading to the tree, bouquets of flowers and a pillow on the ground (which Whitney failed to notice). When she heard a viola begin playing, Whitney was sure a wedding was about to commence and that she was in the wrong place, but then Chris came from behind the tree with a dozen roses. He led a shocked Whitney to the tree and knelt down on the pillow to propose. Whitney said, ”Of course!” They are now planning a spectacular wedding for September of 2013.

Carolina Girl Meets Jersey Boy

We are just days away from our annual bridal showcase. I am so excited. Excited about all of the great vendors, excited that it is going to be sunny and beautiful, and definitely excited to see all of our brides. I thought that I would kick the weekend off with with a fun love story.

When Neal McTighe met Heather Sidden...it was nothing but sparks.

Neal tells their story....and his words are full of delightful swooning. Heather..I would definitely say that he is a keeper!

Carolina girl meets Jersey boy.

That’s what this story is all about.

We first met in June 2010 at Lilly’s Pizza in Raleigh, N.C. I was inside waiting. Heather showed up a few minutes later. I saw her and lit up. “She’s absolutely beautiful,” I thought. Smiles were everywhere in the room. (The others in the restaurant were apparently aware of the significance of the encounter.) We grabbed a menu, put together a perfectly orchestrated pizza, Heather called me out on my “knowledge” of Carolina basketball, and we headed downtown for a drink. Six hours later we went our separate ways, though not wanting to, and I missed her the minute she drove off. As is customary for these sort of things, I waited no more than a few hours after waking the next morning to give her a call to see if she wanted to meet again at noon.

She said yes, we were again all smiles (and those around us). The rest is history. This is a true love story, one of two people finding happiness together. Laughter. Excitement. Friendship. Companionship.

The proposal was done in typical Neal fashion: awkward, nervous, anxious. . . . Heather was in Chapel Hill getting her hair cut. I asked her if she’d like to meet to grab some ice cream in Chapel Hill, explaining to her that I had to be there to “drop off a book at my old professor’s office.” She agreed (if it wasn’t to see me, I knew at least she’d want to get ice cream!). I dropped by her salon, picked her up (she looked amazing), and we headed to campus to drop off the book. It was a beautiful, sunny day. 78 degrees. April 30th. Everyone was on campus, including about 100 people right in the spot where I had hoped to propose–under the historic Davie Poplar. This called for a bit of improvisation, which I’m, um, known for, of course. “Heather, why don’t we head over there, it’s pretty. Oh wait, let’s go over there. Wait, wait . . . it’s more beautiful here, in the arboretum.” Frisbees zoomed by, the word “duuude” echoed in the woods, and of course, a woman chose the spot to practice for her upcoming operatic performance. But I stood tall (actually, I got on my knee), and made sure it was the time. We came to a little bridge over the tiniest creek, surrounded finally by some quiet and solitude, and I asked beautiful Heather that special question. She shouted “Yes” (a miracle!), and I was lit up like all the stars in the sky. I had a little trouble with the ring, though. I had placed it in a plastic bag (again, typical Neal fashion!) and had difficulty getting it out of the bag. Heather laughed, said, “Oh my gosh, you put it in a plastic bag!” But then I finally got it out. I never saw her eyes smile so wide. She put it on her finger, was shaking. We were the happiest we had ever been (and each day since we’ve gotten happier). We’ll forever cherish that plastic bag and the laugh it gives us.

And now here we are, getting married one year after our engagement, April 28, 2012.

We’re so happy that we’ll share this day with our close friends and family.

The ceremony, with reception to follow, will take place at The Carolina Inn at half past five o’clock, April 28, 2012, in Chapel Hill, directly beside the University of North Carolina. All profits from the running of The Carolina Inn go to the University Library Fund of the University of North Carolina.

New Year's Day....it is my favorite day of the year.

It's day one of a new 365 day journey around the sun.

In reality...for me...it's my birthday...and the first day of a 364 day countdown to the big 4-0.

Actually I think that I got lucky this year because 2012 is a leap year which gives me one extra day....unless according to the predictions by the mayan calendar...the world ends.. in which case I'll be 39 forever. (I may claim 39 forever either way).

So what are we thinking about here at The Carolina Inn on the first day of a new year?

Well..a lot of things and as we sat around with our paper, pens, and ipads among us...we jotted these ideas down and wanted to share them with you.
Devon is an amazing young woman and completely committed in her service to our guests. She is someone who always makes it happen. Here are her sentiments...

"I am excited to showcase our new Old Well wing! It has received a serious facelift...botox if you will...and it shows....(but in a good way...I mean it can still move its forehead and all...) I can't wait to see the look on the faces of our brides and grooms when they enter the Old Well Room for the first time. I know that they will find it nothing short of stunning."

"I think that we have amazing weddings here....but what I have really enjoyed planning are the Bar/Bat Mitzvahs..It is close to my heart. I want my community to know that I have worked diligently with our chef to customize menus and have organized great entertainment packages with local vendors to bring the most amazing and "no worries" experience to this very special day.

So...call me...and until then...Mazel Tov!!!"

What I am thinking about???...ideas!!! Ideas on how can I make an event more intimate, more creative, exceptionally serviced, exquisitely decorated, and unequivocally unique! Believe me...I have lots of ideas...and I am committed and passionate about leading a team that is focused on people who help others navigate through once in a lifetime experiences.

I keep a little torn piece of paper that is taped to the bottom of my computer screen. It captures a saying that I jotted down many years ago when I started out in the hospitality business.

"We are just people serving people".

It is my personal golden rule...treat others how you want to be treated. I hold this sentiment in high regard for each new encounter that I have here at the Inn and I find that often in pursuit of serving others that I am the one that ends up with the greatest rewards. I guess that is why it is that I do what I do....it means something to me to see happy faces, excited faces, contented faces. I hope to see more of these in 2012.

A Merry Little Christmas....

Well....it has been a busy holiday season here at The Carolina Inn and as things start to wind down a little I just wanted to take a moment and thank all of you who shared a little of yourself and your family with us over the past few weeks. Whether you came for tea, breakfast with santa, lunch in the restaurant, or just to meander through the halls and take in the decor....we truly want to extend a heartfelt thank you to you for allowing us to be a part of your Christmas traditions.

When people ask me what I love about The Carolina Inn I always say that it is the charm of its nooks and crannies that captivates me. I think that if you love the Inn like I do you manage to find a little piece of it that feels like yours.

Wow...we had a busy couple of weeks here at the Inn. Six weddings, nine sorority/fraternity events, three bridesmaids luncheons, and two birthday parties...and this only covers what happened on the weekend! With all of that activity comes the inspiration to share some truly fabulous ideas for a child's birthday party.

When I was growing up most of the birthday parties that I attended were at McDonald's. Those of you who are old enough remember the sickening sweet orange drink, the Happy Meal, and the cake with white frosting and yellow trim will appreciate the fact that there is a whole new world of ideas for you to throw the perfect birthday party for your child.

The University's Living Room

When I started classes at UNC in August of 1972 I was in awe of the University for many reasons. The most important being the overwhelming pride I felt knowing that I was a student at the oldest state university in the country. Think about that...North Carolina was the first state to realize the importance of education for every citizen. I still get goose bumps thinking about it. I love this campus. My boss says that I give the best campus tour around. As a student my daily travels often took me into the sanctum of The Carolina Inn. I didn't realize then that I would one day help to naviagate the planning and coordination of the UNC alumni activites. It is such a great pleasure for me to serve a community that holds my most treasured academic nostalgia. I have been a busy little bee over the past couple of weeks and taking great care in every detail of a few very important UNC events.

Now known as "The Carolina Way" I pride myself in serving each and every one of you with passion, perfection, enthusiasm and innovation.

Called the University's Living Room by Bill Friday, UNC President emeritus, The Carolina Inn has become the center of UNC celebrations.

It was indeed our honor to provide the "living room" to host a

"A Toast to Woody Durham".

On October 13, Lineberger Comprehensive Cancer Center sponsored a special event for Woody Durham. Always referred to as the "Voice of the Tar Heels". Woody retired after forty years of community service....ironically he is the only person who remains from my days as a student.

Woody and his wife Jean, have been tireless supporters of the Lineberger community.

In recognition of their work a room at the cancer center has been donated in their name.

Among the guests were basketball legends Eric Montross and Phil Ford, as well as Chancellor Thorp, Athletic Director Dick Baddour and Woody's former radio sidekick, Mick Mixon.

A highlight of the evening was playbacks of some of the best of Woody's calls.

Time to make the donuts...

Remember that commercial??...The one where the funny little guy with a mustache used to arise at the crack of dawn to provide fresh donuts to loyal customers? Well on Friday morning the banquet staff was doing just that as well. Not really making donuts...but we did have an early call...2:30am early to be exact. It takes a lot of preparation to serve over 300 guests at the Smith Center. There were pastries to bake, tables to set, and coffee to brew.

The annual "Fast Break" breakfast is hosted by Lineberger Comprehensive Cancer Center and Coach Roy Williams. Our partnership with Lineberger for this event has become a tradition and the unofficial kick-off for basketball season.....my favorite time of year!

To date this event has raised over $1 million for Lineberger. The Carolina Inn is proud to have been a part of it from the beginning.

Stuart Scott was the main speaker, and many former players were in attendance including Vince Carter, Brian Bersticker and Eric Montross.

Jupiter Ball

This fall we will also partner with the Morehead Planetarium and Science Center to host the Jupiter Ball. This fundraiser raises money to improve the quality of science education for children across the state.

PlayMakers Ball

Winter will bring the Playmaker's Ball, scheduled this year on February 11, 2012.

This event is always fun...its kind of our version of a big Hollywood gathering. Men is snazzy tuxedos and women in elegant gowns! Designers will transform our banquet space to interpret their version of a common theme centered around "Love". It is always interesting to see the creativity at work for this fundraiser to benefit Playmaker's Theatre.

The Morning After

There is no doubt that the family and friends of the wedding couple at the Inn tonight are having a great time...and when I mean having a great time...I mean that they will most likely be looking for some aspirin, a cup of strong coffee, and probably a bloody mary around 9 o'clock tomorrow morning.

Years of wedding planning always yields the same question from brides.

"What do I do for breakfast for my guests the day after the wedding?"

My reply....

I tell them that there are so many factors to consider. You have guests that need to leave early, guests who will want to get up late, and without question many guests who will be nursing their party hangovers. Oh...and don't forget about Aunt Mary who traveled through three states to join the family for the nuptials and will complain if she doesn't get something for breakfast before she hits the road again.

So here is my solution

Keep it fun, keep it simple, and always keep it "cozy".

So what do you serve guests with a diversity of tastes?

The Breakfast Burrito and Sandwich Bar

This is not only fast but it can serve people for many hours. Guests can grab it at 6am in the morning before they leave for a flight or nibble on it at 10am with a smoothie.

It is grab and go at its best.

What you can offer to pile up inside is endless. Eggs, bacon, cheese, tomato, avocado. hash browns, onions, peppers...

The Smoothie Bar

Nothing can sooth a hangover better than a little fruit....so how about a chef attended smoothie bar? This will delight everyone for sure. It's colorful, it's unique, and people just love it when they can have a treat that was designed just for them. With a wide variety of fruits and other ingredients on display this liquid pleasure can be served up for guests dining in or others who need to leave in a rush.

The Latte Bar

I know that they say caffeine is bad after too much alcohol but people still equate it with the journey to cure the hangover blues. So let's just give it to them. A latte station will win you big points with everyone even if Aunt Mary isn't quite sure what it is...

The Bloody Mary Bar

YES! This has become a staple for our wedding farewell breakfast. It starts with a really good vodka but ends up being about the "extras"

Your guests will be raving about this to everyone.

When I started out my career in hospitality it was at a little inn in Kennebunkport, Maine. Every morning I would labor over hand made granola. I would serve it with lots of dried fruit and nuts and a little toasted coconut. It was always the most popular item on the menu.

Many years later it is still my favorite breakfast offering.

Our hand made granola at the Inn is filled with hearty oats, honey, brown sugar, and a hint of vanilla. What guests want in it is up to them.

Choose from fresh fruit, dried cherries, raisins, sunflowers seeds, or candied pecans to name just a few.

Sprinkle it over yogurt or eat it with just plain milk.

First Comes Love....

I am such a sap for a beautiful love story or "Happily Ever Afters" as we refer to them at The Carolina Inn. Some stories are funny, some are sad...and then there are those that fall into the...

'oh my..I might start crying right now" category.

I knew that upon my first encounter with Elizabeth Cox that this was going to be one of those stories that met the criteria for a box of tissues.

First Comes Love....

Elizabeth shared her story with me about how she met her groom.....

"We met on match.com (I'm not sure if we even told my parents the actual story). We wound up meeting at a restaurant/bar in town for our first date. Andrew was at the bar chatting with a drunk patron. I was late because I was fixated on getting my make up right. The moment that I set eyes on him I knew that it was love at first sight. In the process of enjoying a wonderful evening, the guy at the bar who was chatting with Andrew asked us how long we had been dating. I mischievously told him that we'd been going out for about 8 or 9 years and that I was getting tired of waiting around. He then asked Andrew when he was going to pop the question and Andrew's response was "he wasn't sure what he was waiting for... maybe the 2nd date..." He didn't actually propose on the 2nd date but we have been together almost every day since the day that we met."

"Popping the Question"

"I couldn't have been in a happier place in my life...I thought that I had the fairytale. It was in those moments of bliss that I started to have some health problems. Health problems that required me to see an oncological surgeon and have several tumors removed. The procedures were difficult and caused complications, requiring me to need assistance just to make it through a daily routine. Andrew pretty much moved into my apartment to take care of me. His sales position allowed him to be able to work from the kitchen table.

He was tireless in his commitment to me. I knew that this guy was a "keeper" and that I wanted to spend the rest of my life with him.

One of the first nights that I was feeling well enough to go out for dinner, I not so casually dropped several hints that Fall was my favorite time of year and that I have always wanted to get married at my beloved alma mater, UNC...and as a matter a fact next Fall would be perfect!

We literally both pulled out our calendars, excel spreadsheets, and started planning. Later that week we went to a jewelry store and picked out my engagment ring. When the ring arrived, Andrew got down on one knee in the store, much to the surprise of the jeweler.

So it wasn't so much "popping the question" as it was two neurotic , type A people planning the logistics of a large event.

Then Comes Marriage

"I was so excited to have my wedding at The Carolina Inn. Everything was coming together perfectly.

I did however continue to have serious health problems and when I thought that I would be facing chemotherapy I had to make the call to the Inn letting them know that I may not be able to have my wedding after all.

It was a sad phone call and a sad day for me."

With an uncertain future, Elizabeth and Andrew knew that they wanted affirmation of their love for one another.......
so they eloped.

Elizabeth said it was kind of and ode to "in sickness and health".

They wanted to be together no matter what happened.

"A lot of people don't understand why we eloped..but it made sense to us" states Elizabeth.

Elizabeth and Andrew did get their "Happily Ever After".

Elizabeth did not need chemotherapy and her wedding at The Carolina Inn could go on as planned.

On September 25, 2011 Elizabeth and Andrew celebrated their union with a vow exchange and reception with their closest friends and family.

Do Me A "Favor"

Brrrrr..it is a chilly day here in Chapel Hill..and I LOVE IT. It is truly reminiscent of a childhood spent growing up in Western New York. My sleepy little hometown is a place where Fall is ushered in by the smell of apples from the orchard, the sounds of the wind whipping through the colorful leaves and the feeling that the only warmth that you might find is in a mug of hot cider...YUM. Well..since I have grown up I have abandoned the hometown and the hot cider and have replaced it with the comfortable weather of Chapel Hill and my favorite Fall beverage...a pumpkin spice latte from Starbucks. (which I am sipping right now)

The weather has completely inspired me to share with you my favorite Fall favors. These are not just your average favors. Gone are the days of candied almonds wrapped in tulle and tied with a bow. These favors will really impress your guests and trust me...they will be talking about them for a long time.

Favors can be many things. They can be a little treasure to take away and savor alone or they can be a treat or libation to enjoy together.

Seasonal Martinis

You want to do me a favor at an event...serve me one of these.

Apple Cinnamon Toast Martini

Ingredients

1 1/4 oz Smirnoff Green Apple Twist Vodka

1/2 oz Goldschlager

Dash of Green Apple Jell-O

Sliced Apple on Top

Cinnamon rim

Garnish with Cinnamon stick,Apple Slice

Mix all ingredients in a shaker with ice. Strain into a Chilled Martini Glass rimmed with cinnamon. Garnish.

Chai Martini

I love anything that is served in a creative way...and aren't these just adorable

2 oz Vanilla Vodka

2 oz Chilled Chai Tea

1 1/2 oz Orange Liqueur

Cinnamon Stick

Combine the Vodka, Tea, and Orange Liqueur in a cocktail shaker with ice.

Shake vigorously

Donut Bread Pudding with Espresso Whipped Cream

I have been making some version of this recipe for ages.

Who needs a plain old Krispy Kreme when you can have this?

1 1/2 dozen glazed doughnuts, cut into sixths

1 quart heavy cream

2 cups milk

10 large egg yolks

2 large whole eggs

1/2 cup sweetened condensed milk

1/2 cup brewed espresso, chilled

If you have never had a french macaroon you just don't know what you are missing.

I once stood in line in for two hours in the freezing cold just so I could have a few from my favorite pastry shop in Paris...Laduree....or as I like to refer to it...heaven on earth.

I didn't realize how crazy I was about these little treasures until I stepped off of the tour bus with a bag of them and tripped. With my face quickly approaching the ground all I could think was..oh no...my macaroons are going to be crushed. I did the only thing I could think of. I threw the bag in the air and screamed for my Dad to catch it. They survived...and I limped back to the hotel room with a sprained knee and enjoyed every single morsel of those goodies.

Sara Elizabeth Manley....she was someone's daughter, someone's sister, someone's friend....and on August 11, 2001...she was someone's bride.

Sara lived and worked in New York City, but during visits with her father, who had retired to Chapel Hill, she fell in love with The Carolina Inn. She saw it as the perfect place to celebrate her wedding day with family and friends. Sara left no detail unattended when she married Bill Harvey. The magenta roses carried by the flower girls matched the magenta napkins on the table, the bridesmaids dresses perfectly accompanied her Vera Wang gown, and she took as much care in the menu planning for her vegetarian guests as she did for the other 120 invitees.

September 11, 2001

Sara's office was located on the 92nd floor of the North Building of the Trade Center, directly below the entry point of the plane that struck the building. She was likely sitting at her desk, with little time to become aware of what was happening before the ceiling caved in on her and the floor collapsed beneath her. It would have been impossible for her to have remained conscious for very long in the fire where she was trapped.

A Brother Reflects....

Sara's brother, John Manley, has spent the past decade wondering what the final moments of his sister's life might have been like...but he is thankful to have had a joyful time with her in the month before her death...

"Sara's family and friends had the chance to celebrate her at a goodbye party, although nobody at the time could have known that her wedding would be a farewell. Everyone had the opportunity to see Sara at her absolute best. She got to spend the last month of her life basking in the glow of a European honeymoon and the first weeks of domestic bliss."

When Kristen Wester, catering manager and Sara's wedding coordinator at the Inn, absorbed the news of Sara's death she vowed that this beautiful bride would always be remembered.

The staff at the Inn planted a lily magnolia tree in the Ann Hill Courtyard so that Sara's family would remember the joyous occasion of her wedding. It is often adorned with the pink roses that her father leaves for her.

Most of us at the Inn walk past this marker every day. It is a place that we have reserved in the corner of our little world, a space that is watched over and tended to by careful hands.

The Sara Manley Annual Easter Egg Hunt
Sara was a true humanitarian. She volunteered for several organizations and was involved in the Fabretto Children's Foundation, a charity that seeks to enable impoverished children and their families in Nicaragua to break the cycle of poverty through education, health, and community involvement.
In the spirit of who Sara was and what she stood for The Carolina Inn started an annual Easter Egg Hunt for kids in the community who might might otherwise not be able to enjoy the Easter holiday and all of its treats. Project Homestart, Interfaith Council, and Family Outreach Centers of Orange County partner with the Inn to identify participating families.

The Sara Manley Annual Easter Egg Hunt takes place every year on Good Friday.

Kids are treated to games, dancing, face painting, lots of goodies...
and undoubtedly.."a little magic" compliments of Sara.

Yes...the guests of Courtney and Stephen's wedding celebration were totally busy being fabulous this weekend beginning with a bridesmaid luncheon on Friday...

Chilled Cucumber Soup, The Carolina Inn's chicken salad with dried cranberries, red grapes, and candied pecans on toasted sour dough and served with hand cut potato chips, fresh fruit kabobs and caramel cream cheese dip...topped off with Key Lime Pie and Mimosas!

So what makes a wedding fabulous? Most would say that its pretty flowers or great music (I do love these things)...I say... its the people. Courtney Page and Stephen Whilden were surrounded by fabulous friends and family who made their wedding day a wonderful celebration.

From the moment that I met Courtney, her mom, Diana, her sister, Becca, and her dad, Guy I knew that this was going to be one of those weddings that I would always remember. These people were the real deal..truly a group of endearing individuals who were completely sincere in their devotion to the journey of creating a perfect day for their daughter and sister... and her future husband.

FUN...yes we had fun! We had great conversations, delightful tastings, lots of linen choices, and most importantly, somewhere along the way I am sure that all of us have made a new friend.

I love The Carolina Inn...I work here so I guess technically I am supposed to...but I really love it. Maybe its because from the moment that I walked in the front doors it just felt like home or maybe its because I get to see so many "happy days" here. Whatever my reasons are there is no doubt that The Carolina Inn is a lovely place where one can gather with friends and family....and most certainly the perfect location for a wedding. All weddings are special to us..We take a personal interest in the experience and the people involved. Our brides become our friends for life...they come back for anniversaries, birthdays, holiday festivities, and often for the weddings of their children. Yes...The Carolina Inn is a treasure...but only because our very special guests have made it that way. Thank you for always keeping the Inn close to your hearts.

Uggghhh...I don't love Mondays... If the week started on Wednesday...life would be so much better. As planners...we do a lot of our work over the weekend...the part of the week that I love. I thrive on the moments of time when all of the planning finally comes to life. Whether it s a wedding or a gala or a birthday celebration...our planners have a few pieces of advice to keep your event manageable and unique!

Don't sacrifice quality for quantity...make up a list of "must haves" and then put everything else out to the curb. With all of the choices available to you it is easy to become overwhelmed. You don't have to have everything! Never put yourself in a situation where you have hired your 12 year old cousin twice removed to be your DJ...just so that you could afford a PhotoBooth...with the mayhem that will occur from not having an experienced master of ceremonies you may not want to remember that night in photos!!!

Listen to the people who know what they are doing...if your facility planner says that you can only fit 10 tables in your space don't tell her that you need 14...you may be surprised that your guests will actually have to hang from the chandaliers.

Take Time to Smell the Roses....

Like a woman's neck desires to be adorned with beautiful jewels a bride longs for her wedding day to be adorned with beautiful flowers. A wedding without flowers is kind of like putting up a Christmas tree without twinkle lights...completely disappointing. Those of you who have labored through countless hours of magazines spreads to find your perfect tapestry of blooms know what I mean when I say that next to the dress the journey to find your palette of petals is a process that most of time leaves you simply overwhelmed. Here are a few simple tips to get you through the mayhem:

(1) Remember Where You Are: The time of year you get married and your geographical location will decide what types of flowers that are available to you.

· Roses are available year-around
· Calla lilies and tulips bloom during winter and spring
· Hydrangea are in season during the summer and fall
· Peonies peak in the spring
..... Plan Your Wedding around your Favorite Flowers? Well I probably wouldn't go that far but flowers are certainly less expensive when they are more abundant. I guess that is why the summer months are usually considered wedding season.

(2) Remember Who You Are: Your flowers should always should fit you....if you prefer sandals don't wear high heels...if you like color don't pick a bouquet of white roses...you get the idea.

(3) Think Outside the Box-These days it's all about picking flowers that accent the wedding party instead of matching it....my friend always tells me..."it doesn't have to match...it just has to go".

(4) Don't go Overboard-A little beauty goes a long way. Make the biggest bang during the reception when your guests are sitting up close and personal to the centerpieces and are in one place long enough to enjoy them.

(5) The OOhhh Ahhhh Factor- Always pick flowers that make you happy! Just an observation though....don't get so carried away with the flowers that your bouquet weighs 16lbs...I have never seen a happy bride carrying a heavy bouquet (unless she has really worked out before the wedding)

My favorite moments of wedding preparation can be summarized when I am watching the flowers transform not only a ballroom but the entire mood of the day. It's as if somehow the arrival of the bouquet to a bride's room signals the beginning of her wedding celebration. It's the colors, the smells, and the feelings that those blooms emote the somehow captures quite literally the essence of a wedding story.

I knew that as soon as Prince Charming put the glass slipper on Cinderella's foot that shoes would indeed be a key element to the bridal ensemble. For ages, the bridal shoe has made a statement. For example...did you know that brides used to toss their shoes at the end of a wedding instead of a bouquet to hopeful maidens in search of their mate or that English brides tucked coins into their shoes for good luck? Personally, I love shoes but have often found wedding shoes...boring. That is until stylish heels with color and posh recently returned to the wedding marketplace. These days a bride's shoe is making a real fashion statement...going much farther than the traditional satin pump. I encourage you to find your perfect pair of shoes that communicate your own style...something that you could perhaps wear again...or a pair of vintage shoes that continue to tell their story. No matter which shoes you choose to make your wedding day journey in remember the golden rule for happy feet...never sacrifice comfort for style! I'm giggling a little...because I think that this rule is probably pretty good for finding a mate as well!

With the impending doom of a category 3 hurricane headed for the North Carolina coast, we are working hard today to calm nerves and make preparations for moving an outdoor wedding indoors.

I know brides have the romantic idea of communing with nature…the beautiful flowers, the tweeting birds, the fresh air, but really even Chapel Hill, known as “the southern part of heaven” is not that great in August. Of course, I am also the kind of girl who doesn’t like camping out, so I would always go for the air conditioned banquet room.

So, the tent is cancelled, the florist is contacted to make alterations in his décor, and now the guests can enjoy not wilting under the heat and humidity that is normally prevalent at this time of year.

A bit more of a worry is whether guests will be able to make it or not, and if they do make it can they get back home. One advantage to being a hotel venue, is that we have a built-in solution to the problem…guest rooms.

One final thought about this predicament…Rain on a wedding day is supposed to be lucky, because a wet knot is harder to untie. I hope that is the case, and our bride and groom getting married on this rainy weekend will have many years of happiness together.

All The Single Ladies....

Did you know that there are single women out there who are are actively planning their weddings? The only glitch is that they are not even engaged yet. Now...this did not come as a HUGE surprise to me since at thirty eight I've been planning my wedding since about five years of age..adorned with beautiful pink roses, stunning table linens, and lots of candlelight. I do have my grip on reality and realize that all that planning may be just that...a simple dream. One afternoon I was getting my hair done and my stylist brought out a beautiful Vera Wang wedding dress, matching shoes, earrings, and wide variety of magazines to highlight the rest of her wedding choices. I was at first shocked and then so happy for her...she finally found the man of her dreams....(which quite honestly I didn't even know she was dating anyone). When I asked her when the big day was she said that she "wasn't quite sure yet...they hadn't set the date"...and after a few of her giggles at her own internal monologue she said that "she had no idea who she was going to marry but that she was planning just the same". I thought that she had lost her mind...I mean really...come on...Wang is not cheap! However, she did have her happy ending and exactly one year later walked down the aisle in her Wang gown with her matching shoes and earrings. So for all of you out there waiting for your prince to come...Be Encouraged....and start planning the wedding of your dreams!
